1.HOW TO BE A Real Moroccan Chef

Join local chef Abdou for a three-hour Moroccan cooking class in his home near Essaouira. Choose a tagine, shop for ingredients when arranged, prepare the dish by hand, learn about spices and culture, then share the meal with mint tea, pastries, music, and conversation. Classes run in English or French for groups of up to 10.

“Abdou is a kind and generous young man—he shared his mastery of three different tagines, which we chose beforehand. I very much enjoyed his simple and effective method of having us prepare the entire dish from prepping the ingredients through to bringing the Taheen to the kitchen stove. While tagines cooked on the stove, Abdul prepared herbed tea and served a tray of delicious Moroccan pastries (made by his sister). I have been in Morocco for 10 days and three of the pastries I had never had before, and this was my first tea. Our tagines were absolutely delicious. He even provided me with a take-home container for my leftovers!…”

“Great cooking class in a purpose built training kitchen with two Moroccan chefs who were knowledgeable, friendly and good fun. The trip to the spice market was incredibly interesting, and without any push selling, is an ideal opportunity to buy spices (and Berber clothes moth repellent!) to take home. Highly recommended.”
